This is one of my family go- to’s for dinner. The kids love it and it only takes 20 minutes. It’s so simple, they can make it themselves !!!

Cook time: 20 minutes
Serves: 4-6
Ingredients:
2 cans organic white, navy or Great Northern beans
4 cups organic chicken stock
2 small cans mild or hot green chilies or 1 large jar Green Chili Stew Mix*
1 onion
3 cloves garlic
1 14 oz. can fire roasted Organic tomatoes (optional)
1 T Herbes de Provence or just fresh thyme and oregano
Optional: pickled jalapeno slices
Optional: greek yogurt as a topping
*Meat of your choice: nitrate- free chopped kielbasa, organic shredded/cubed chicken, ham or bacon
Directions:
In a 4 quart pan with 2 T. olive oil, cook whichever meat you have chosen until cooked through. If bacon or other fatty meat, no olive oil necessary. Add onion to meat and cook until transparent. Add 1 T. Herbes de Provence. Mix thoroughly as oil brings out the flavor in spices, then add garlic. Stir for 1 minute, then add rinsed beans, chilies and chicken stock. Bring to a boil, cover, then reduce heat to medium and let simmer until you like the consistency. You can also mix slightly with a hand blender to puree a few of the beans for a thicker version. Add salt and pepper to taste.
