Warm Goat Cheese Salad with Butter Lettuce and Yellow and Red Tomatoes


4 0z. goat cheese
1/2 cup coarse bread crumbs
Salt and pepper to taste
¼ cup olive oil 
1 head butter lettuce washed and broken into medium pieces
Selection of yellow and red tomatoes sliced
Fresh basil chopped
½ cup olive oil
1 clove garlic chopped finely
1/3 cup balsamic vinegar
Lemon pepper and fresh cracked pepper to taste.


Combine dressing ingredients. 
Cut 1 oz of goat cheese and form it into a 2 inch patty.
Dip in olive oil, then dip in seasoned bread crumbs.
Refrigerate until time to eat.
Preheat oven to 450’.
Place goat cheese on cookie sheet and cook until brown and crispy, for 6-10 minutes. 

Mix half of the dressing with the lettuce. Place in the middle of a serving platter. Place the tomatoes around the lettuce. Sprinkle the remaining dressing over the tomatoes with the chopped fresh basil.  Then add the cooked goat cheese to the platter…
