Toasted Pine Nut and Bread Crumb Coated Goat Cheese with Slow Roasted Tomato Sauce

Hors d’oeuvres for 6

  • 1 small log of goat cheese
  • ¼ cup panko bread crumbs
  • 1/8 cup toasted pinenuts ( or pistachios) finely chopped
  • 1 baguette sliced and toasted

Coat the goat cheese log with a mixture of toasted pine nuts and bread crumbs.  Pre- heat the oven at 450 degrees. Place the cheese on an aluminum foil covered baking pan.  Change the oven to broil and place the cheese log in the oven. Watch very carefully until it is slightly brown.

Remove from the oven. Place a cup of the tomato sauce on a serving dish and then place the cheese in the center of the sauce.  Serve with toasted baguette slices.
