Texas Turkey Tacos

Zucchini Turkey TacosThis is a fun, healthy twist on regular beef tacos and is one of my girls’ favorite dinners. It’s an easy way to get your veggies in and still get your Mexican food fix!

Prep time: 10 minutes
Cook time: 10 minutes
Serves 5-6 kids

 

Ingredients:

1 lb. Hormone- and antibiotic-free ground white turkey breast
1 Organic zucchini* diced in quarters
1 Cup carrots diced
½ Onion diced

Homemade “healthy” taco seasoning

1 Package blue corn tortilla shells or 1 package whole wheat tortillas
2 T. Organic canola* or olive oil
Organic shredded Monterey Jack or Queso Fresco
Greek yogurt (optional substitute for sour cream)

(* It’s important to always buy organic canola and organic zucchini as the conventional versions of both are always genetically modified!)

(** You can also do multicolored bell peppers instead of zucchini and carrots. Just don’t cook them too long- kids like crunchy, not mushy!)

Directions:

Chop zucchini and carrots and set aside. Chop onion and cook in pan with canola oil until translucent, about 5 minutes. Add turkey breast and cook until brown. Make seasoning per packet direction by adding warm water, then add to turkey mixture along with zucchini and carrots. Don’t overcook or zucchini and carrots will be mushy! Serve in crispy taco shells or soft tortillas as is, or add pico, salsa, organic cheese and Greek yogurt. That way you get red, orange and green veggie groups!!!!!!
