Tasty 5 Minute Slaw

Kaleand Brussel's sprouts chrome


1 bunch lacinto (a.k.a. dinosaur) kale, thick stems removed and leaves thinly sliced

4 cups shredded red cabbage (about 1 small head), quartered and cored)

1 small red onion, thinly sliced or two chopped green onions, white and light green parts only

8 Brussel’s sprouts (raw), shredded with stumps cut off

1 small red bell pepper, cored, seeded and thinly sliced

2 cups shredded cabbage

1/4 cup white vinegar

1 1/2 tablespoons light organic mayonnaise (optional)

2/3 teaspoon sugar

1/4 teaspoon sea salt

1/4 teaspoon ground black pepper

I cheated and bought a medium container of Kale Slaw from Whole foods for $1.30 because I was in a hurry! I then added the red pepper, Brussels’s sprouts, scallions, feta and some red pepper flakes. I served it with my World’s Best Pulled Pork Adobo. It was incredible and kid-approved! We are a family who NEVER eats mayonnaise, but you couldn’t even taste it with all the fresh veggies. Feeds 6-8 as a side.
