Slow Roasted Tomato Sauce

  • 4 ripe organic tomatoes sliced
  • ½ tsp organic sugar
  • Salt
  • 3 tablsps.  organic olive oil
  • 2 cloves of garlic finely chopped
  • ¼ tsp. ground oregano
  • ¼ tsp ground thyme
  • Dash of cayenne pepper
  • ½ tsp salt or to taste

Place tomato slices in a shallow baking dish.

Dribble 2 of the 3 tablespoons of olive oil on the slices.

Shake a small amount of sea salt on each tomato.

Sprinkle a touch of sugar on each slice and add the chopped garlic on the tomatoes.

Cook the tomatoes for 2 hours at 200 degrees.

Let the tomatoes cool slightly. Then puree in a blender with the rest of the ingredients.

Place in a medium sized pan and simmer slowly for 10  minutes.
