Sauteed Sugarsnap Peas with Prosciutto and Onion


  • 2 cups sugarsnap peas (fresh spring peas are good also)
  • ¼ cup chopped yellow onions
  • ¼  cup chopped prosciutto. The prosciutto should not be too thin or it is difficult to chop
  • 2 tablsp. olive oils.

Saute the onions and prosciutto in a pan over medium heat until the onion are soft.

Add the peas and sauté just until slightly but still crisp.

Salt and pepper to taste

Serve immediately

For a slightly different version add thin strips of red or yellw bell pepper with the peas.
