Gazpacho with Avocado and Shrimp

Serves 8

  • 2 organic cucumbers coarsely chopped
  • 4 organic ripe tomatoes coarsely chopped
  • 1 small yellow onion finely chopped
  • 1 jalapeno with seeds and ribbing removed finely chopped
  • 1 organic green bell pepper coarsely chopped
  • 2 stalks of organic celery coarsely chopped
  • 3 garlic cloves finely chopped
  • 32 fluid ounces of organic Vital Veggie juice chilled
  • 3 tablespoons of balsamic vinegar
  • 2 tablespoons of organic olive oil
  • Salt and pepper to taste.
  • 1 large avocado
  • 8 cold boiled shrimp or 8 tablespoons of cooked lump crab meat

Place all of the ingredients except for the avocado and shrimp in a ceramic or glass bowl.

Stir well and chill.

For more protein, serve with small chunks of avocado and a shrimp and even some Tabasco for you spice lovers!
