Adapted from the Joy of Cooking
1/4 cup organic whole wheat flour
1/4 cup organic white flour
1/6 cup organic corn meal (try blue corn meal too)
1 rounded tblsp rolled oatmeal
1 tsp organic brown sugar
1/4 tsp salt
Dash of cinnamon
1/3 tsp baking soda
1 tsp baking powder
1 1/2 tbsp melted butter
2 tbsp honey
Slightly over 1/2 cup milk
Mix all together
Heat pancake skillet over medium heat
Rub 1 tsp unsalted butter or a little canola oil on a paper towel over the pancake skillet.
Drop a large tablsp of mixture on to heated skillet. Spread out a little.
Cook until underside is brown. Flip pancakes and cook until they are done. From 1 to 1/2 minutes per pancake.
Serve with organic maple syrup slightly warmed and homemade applesauce.
