Easy Brown Rice Stir Fry

Many moms have ben asking me for easy 20 minute dinner, so here is a favorite in our house:

1.5 cups brown rice (it’s better if you use from the night before or make earlier in the day and stick in the fridge for dinner)

Green onions, chopped, mostly green and light green part

Nori (sea veggies): handful, cut into small strips with scissors. They come in a sheet.

*Mushrooms:  1/2 cup, diced, Mushrooms are a super food and I’ve found that if you cut these up very small, the kids don’t notice them. I sometimes saute them first to get them really small.

Soy sauce or Tamari: 1 -2 T

Sesame oil: 1 tsp.

Olive oil: 1 T

Black sesame seeds: 1 T. These are high in the essential fatty acids your kids need and have no taste, so they are easy to throw on without too much complaining.


Heat day old rice in skillet with olive or canola oil. Add sautéed mushrooms and all other ingredients. Mix for 3-4 minutes. Serve with steamed broccoli and crunchy red, orange and yellow bell peppers. You can also saute chicken breasts and serve them shredded on top.
