Curry Chicken Salad with Kale Peanut Slaw

 

4 cups white chicken meat

½ cup chives

2 apples diced

1.5 cup red peppers

1 5 oz water chestnuts

½ cup shredded coconut, toasted

2 cups mayo

2 T sugar

1.5 tsp turmeric

2.5 tsp curry

1.5 tsp cumin

salt and pepper to taste

Mix all ingredients together and serve with Kale Peanut Slaw.
