Chicken Breast Stuffed with Herbed Goat Cheese and Pine Nuts

Cook time: 20 minutes

Serves: 4


2 Organic or hormone- free chicken breasts

¼ cup Herbed goat cheese

Handful toasted pine nuts

Marinated red and yellow peppers

Herbes de Provence

7 Seed Crust (comes in a jar)

Sea salt

Pepper to taste



Pre-heat over to 325 degrees. Pound chicken, cut down middle and rub with olive oil, minced garlic, salt, pepper and Herbes de Provence on outside. Rub inside with olive oil, salt and pepper and stuff with goat cheese mixture.

Cook for 20 minutes or until chicken is cooked all the way through.

Serve with Shredded Brussels Sprouts and Brown Rice.
