Applesauce Gingerbread

Preheat oven to 350’F

Heat up 1 cup of organic applesauce, homemade if possible

Remove from heat

Add 1/8 cup molasses and 1/4 cup amber agave syrup or maple syrup

Add 1 tsp baking soda and stir all together

Beat in mixer 2 large organic eggs with 2/3 cup organic sugar

Add 1/3 cup canola oil

Sift together 1 1/2 cup unbleached organic flour, 1 tsp powdered ginger or 1/4 cup finely minced fresh ginger, 1 tsp cinnamon, 1/4 tsp salt and 1/4 tsp ground cloves

Mix the applesauce mixture and flour mixture with the egg mixture. Add a handful of golden raisins if you like.

Spray mold or pan with non stick spray or oil

Bake until gingerbread is firm to the touch.

12 minutes for Madeleine molds. 22 minutes for gingerbread men molds. 40 -50 minutes for a loaf pan or 9×9 baking pan. Do not over bake. As soon as your finger touch leaves no mark, remove from oven and let cool.
