School’s in, the sports have begun and menu madness has set in. As I sat down to look at my kids’ sports’ schedules last night, I was filled with a sense of dread.
How on earth am I going to feed my girls and hubby a healthy dinner (and stay sane!) with all of the driving that’s going to be happening this fall?

Red Snapper Fish Tacos with Cilantro Slaw and Fresh Avocado
