I was asked by friends and acquaintances alike multiple times throughout this past school year if I would offer cooking classes for middle school girls. When the summer arrived, I decided to do just that!
I put together a two- day “lifestyle” class that included instruction on grocery shopping (we took a field trip each day to Whole Foods to actually purchase the ingredients for our meal), budgeting and preparing and cooking several yummy 20 minutes dinners. We also learned how to make several great veggie sides, like Brussels’s sprouts with pancetta, which the girls devoured.

I also have been teaching the girls how to juice, which I think was the biggest hit of all! We made several concoctions that were absolutely delicious, using both fruits AND veggies. We also learned how to make many gluten- free dairy- free meals.
While eating our fabulous home-cooked meals, we discussed the importance of buying organic and eating seasonally when possible and how food affects your health, skin and performance in the classroom and on the playing field.
We have been having a blast, and I have been overwhelmed by the girls’ enthusiasm for learning how to change the way they eat for life.

Gabrielle, my daughter Caroline attended your 2 day course this past week. I am amazed at what a positive difference and impact it had on her awareness of being healthy. Last night she asked for grilled veggies as part of her meal choice at a Mexican restaurant!
All my children are grown but what a wonderful thing you are doing. I saw your information and program listed on Fox26 news and thought what a great idea to teach the young. Keep up the great job!
